We spend more time here than anywhere else. The neighborhood is mostly residential, so things stay relatively quiet until the evening hits. We have a few tables set out and the kitchen is always humming with some sort of activity. It isn't a massive corporate operation; it’s just a few of us trying to make sure the food comes out right and people are fed. The walls have a few scuffs on them and the front door squeaks a little if you don't push it the right way. Indore is a city that loves its food, so there is always pressure to keep up. We spend our mornings checking the supplies and making sure the fridge is stocked for the day. Sometimes the vegetable delivery is late and we have to scramble around a bit. The heat in the kitchen can get pretty intense during the mid-afternoon. We don't have a big marketing team or anything like that. We just open the doors every day and see who walks in. It is a lot of cleaning, a lot of cooking, and quite a bit of standing on our feet.
