Spice Republic Restaurant

Our place is on the ground floor of Vista Grand Towers, right beside the Digital Shoppy on Raj Bhavan Road. It’s a pretty central location, so we get all kinds of people coming in. Spice Republic Restaurant is a bit of a mix of things. We didn't want to stick to just one style of cooking, so we have a bit of everything on the menu. The space is decent, but it gets packed during the dinner hours. We try to keep the atmosphere relaxed. We don't go for the high-end fine dining vibe because that’s not really who we are. We want people to feel comfortable, even if they’re just wearing flip-flops. The kitchen staff has been with us for a long time, which helps keep the taste consistent. We go through a lot of onions and tomatoes every week, you wouldn’t believe the volume. Sometimes the service is a little slow when every table is full at the same time, but we’re working on that. We don't spend money on glossy brochures or fancy ads. We just focus on making sure the kitchen is running right and the floors are swept. It’s a lot of manual work and long hours on our feet, but it’s what we do. We’ve had some good years here and hope to have a few more. It’s a tough business, but we keep at it every day.
