We work out of Champapet and handle food for all sorts of gatherings around here. It started small, just a few of us cooking for local events, and now we have more equipment and a bigger team. We don't have a storefront where you can sit and eat; it's mostly about packing things up and getting them to the venue on time. The kitchen is always noisy with chopping and big pots boiling. We do a lot of traditional dishes because that's what people in the 500035 area usually want for their parties. Sometimes we’re up at three in the morning getting things ready for a lunch event. It’s a lot of lifting and moving heavy containers. We don't use any fancy advertising, mostly just people telling their neighbors about us after they've tried our food. The recipes are just things we’ve learned over the years. We try to be honest about what we can do. If we’re too busy, we’ll tell you. Dealing with big crowds is stressful, but we’ve gotten the hang of it now. We just want to make sure the food tastes right and there’s enough for everyone to eat. It's a straightforward business, really. No big secrets, just lots of cooking and cleaning up afterward. We keep our gear clean and our spices fresh, and that's about it. We just show up and do the job as best we can.
