We are set up at shop number 2 in Madhavpur, right across from the Maruthi Service Centre. If you’re looking for us, that’s the easiest way to find the building at 1-98/90/22. It’s a practical spot for a kitchen like ours, though the traffic on this road can be a bit much in the evenings. The day usually begins with us checking the supplies that came in overnight. There is always a lot of washing and cutting to do before the first stove is even lit. The area here can get pretty dusty with all the cars and the service center across the road, so we spend a lot of time cleaning the front area and the counters. We aren't trying to be anything fancy; we just have our routine and we stick to it. The kitchen gets really warm by noon, and everyone is moving fast to get the orders out to people waiting. You can hear the fans humming in the background all day long. Sometimes we run out of things earlier than expected, and someone has to run out to get more supplies, which is always a bit of a headache with the local traffic jams. It’s just a regular group of us working here, trying to make sure the food tastes right every single day. We don’t have a big corporate office or anything. It’s just the shop and the kitchen and the people who come in.
