Tinuz Darbar

You can find us at Tinuz Darbar, tucked away in G-1 of Palam Vihar, right behind Ansal Plaza. Gurgaon is a fast-paced place, but our little corner feels a bit more settled. I’ve been working here for a while, and it’s mostly about keeping the kitchen running and making sure the tables are wiped down. We get a lot of people who work at the plaza or live in the nearby apartments. It’s a pretty simple setup, nothing too flashy. Some days are slow, and we just sit around talking until the evening rush starts. When it does get busy, it’s a bit of a scramble to get all the orders out on time. We’ve had the same few cooks for a long time now, so we all know how each other works. Sometimes the electricity goes out, which is just part of living in this area, so we keep the candles and torches ready. We don't spend money on big ads; people usually just find us because they live nearby or heard about us from a friend. The menu is just stuff we know how to make well. I spend a lot of time checking the stock and making sure we don't run out of the basics. It’s a small local business, and we like it that way. We aren't trying to be the biggest place in Gurgaon, just a reliable one for the people in Palam Vihar.
