We are situated at number 1, Chitrkoot Akhand Ashram, right in the Koyal Ghati area of Rishikesh. It’s a bit different here compared to the bigger cities, especially with the ashram right nearby. You get a mix of people coming through—locals who live just up the road and travelers who are just passing through the mountains. Our shop isn't very large, just enough space for the kitchen equipment and a place to stand. We start the day fairly early, getting the ovens warmed up while the town is still waking up. You can often hear the birds or the distant sound of bells from the temples. It’s a quiet life most of the time, though it picks up when the tourist season hits. We don’t have fancy decorations or anything like that. The walls are plain, and the floor is just simple tile that we mop every morning. We spend a lot of time just prepping the ingredients and waiting for the phone to ring. Sometimes we just sit on the stools and watch the traffic go by on the road outside. It’s a small operation, just a couple of us doing everything from taking the money to cleaning the pans. We don't try to be anything we aren't. We’re just a local spot in Rishikesh where you can get a quick bite without any fuss. The mountain air is nice, and we’re happy to be part of the neighborhood here.
