Himalayan Food & Kitchen

We are set up on Khairi Road, right in the Khairi Khurd village area near Doiwala. It’s a pretty spot, and you can see the hills if the weather is clear. Being so close to the Doiwala Sugar Company means there’s always people moving around the area. We do a lot of our cooking and prep work in the back. It’s a local kitchen, so it isn’t like those fast food places in the city. We chop everything by hand and use what we can get from the local markets. The tea is always hot, and the kitchen gets busy when the workers from the sugar company come off their shifts. Sometimes we run out of certain items by the afternoon because we only cook enough for the day. My cousin helps me with the cleaning and the serving. The floors are stone and we scrub them every night, but the dust from the road always finds its way back in by morning. We’ve been here in the Dehradun district for a while now. It’s mostly about getting the food ready on time and making sure the stove has enough wood or gas. It’s a bit of a scramble during the lunch hour at Himalayan Food & Kitchen, but we enjoy the talk and the noise of the village. It feels like home because it is home for us.
