The campus here at C.I.T. in Taramani is pretty spread out. We are the Institute Of Hotel Management Catering Technology And Applied Nutrition. If you walk through the P.O. area, you will find our main buildings. It’s a place that stays busy from early morning until late in the evening. We have a lot of different departments, from the ones focusing on cooking to the people working in the nutrition labs. It’s not a quiet place. You hear the clatter of pots and the sound of instructors giving directions. The weather in Chennai can be tough, but the kitchens stay active regardless. We aren’t really into making things sound more grand than they are. It’s a school where people learn how to work in the service industry. That means a lot of standing on your feet and learning the right way to do things. The campus has a lot of trees which helps with the heat a bit. Most of us who work here have been doing this for years, so we know the routine like the back of our hands. We focus on the practical side of things. Students spend more time with a knife or a serving tray than they do with a textbook. It’s just the way we’ve always operated here in Taramani. It’s a lot of work but someone has to do it.
