India Noodles

Our place, India Noodles, is located at 139/38 on Muthamman Koil Street in Ayanavarm. It is a narrow street in a very old part of the city, so it gets quite cramped. We make noodles here, so you can often smell the flour and the drying dough from the street. The building is not very big, and we have the machines squeezed into the back rooms. It gets quite loud when the mixers are running. We have been in Ayanavarm for a good while, and most people on the street know us by now. The work is mostly manual, from mixing the ingredients to packing the finished noodles into bags. We do not have a fancy showroom or anything. It is just a production floor and a small area to keep the finished stock before the vans come to pick it up. The walls are a bit stained from the steam, and the floor is always covered in a fine layer of flour. We have a small group of workers who handle the packing and the sealing. It is a hot and tiring job, especially in the Chennai summers, but we keep at it. We do not use any big corporate talk here, we just make the noodles and sell them to the local shops. It is a simple life on a busy street, just doing the work every day without any shortcuts.
