Raj Chinese Fast Food

Running Raj Chinese Fast Food in Sector 23 can get pretty hectic when the dinner rush starts. We have been in this part of Sector 23C for a while now, right at shop 67. The kitchen is small and it gets hot, especially during the summer months when the fans don't do much. We spend most of the afternoon chopping vegetables and getting the sauces ready so we can cook fast when the orders start coming in. It is mostly noodles, manchurian, and fried rice that people want. We see a lot of the same faces every night, mostly folks living nearby who don't want to cook at home. Sometimes we get a bit backed up when everyone arrives at once, and you can hear the pans clanging and the burners going full blast. It is loud and a bit messy, but that is how a fast food place works. My cousins help me out with the serving and the cleaning. We don't have fancy menus or anything, just a board with the prices. People just tell us what they want and we make it right then. Sometimes we run out of ingredients early if it's a busy Friday. After we close up, we have to scrub everything down for the next day. It’s hard work on your feet all day, but we are used to it by now. There isn't much else to it, just keeping the stove going.
