Raj Chinese Fast Food Dhaba

You can find Raj Chinese Fast Food Dhaba over at Sector 23 Crawford Market 67. It’s a small place nestled among all the other stalls in the market. We have a big stove in the front where we do all the frying. The smell of garlic and soy sauce is always around. We don't have a proper indoor seating area, just some tables set out on the pavement. People stand around and eat while they are shopping in Crawford Market. It gets very crowded on the weekends. We have a few guys working the pans and one person taking the money. The menus are just printed on a piece of cardboard taped to the wall. Sector 23 is a loud place to be. There are always horns honking and people talking. We use a lot of oil and the floor can be a bit slippery if we don't watch it. Most of the regulars like the spicy stuff. We don't change the menu much. It’s been the same for years. We buy our vegetables right here in the market every morning. It’s easier that way. Sometimes we run out of noodles by nine at night. If that happens, we just close up early. The sign is a bit faded from the sun, but you can still see the name. We're just a basic dhaba doing our thing every day. It is hard work but we are used to it.
