Fauzi Sweer Shop & Dhaba

Being on S.G Road means we see a lot of travelers passing through Manimajra. It’s a busy stretch. Most people stop here because they’re tired of driving. We have sweets in the front and the dhaba seating in the back. It’s not a quiet place by any means. The kitchen stays hot because the stove is always on. We make things in big batches. Sometimes the tea runs out faster than we can brew it. We use a lot of milk and sugar every day. The floor is concrete, which makes it easier to sweep at night. We’ve got some old pictures on the wall that have been there for years. The clock is usually a few minutes fast, but nobody seems to mind. We open up early in the morning. That’s when the truck drivers come in. They want something heavy to start the day. We don’t do fancy plating or anything. It’s just food on a plate. We’ve had the same guys working the tandoor for a long time. They know what they’re doing. It’s a simple setup at 2228. We don't have air conditioning, just some big pedestal fans that hum quite loud. It works for us. People know what to expect when they walk in. No surprises here, just the daily routine. We take the orders as they come and just keep our heads down and work.
