You can find us at the 14th Khajanchi Building on K.E.M. Road. It’s an old building, and you can tell it has a lot of history just by looking at the walls. We have been baking here for quite a while now. The smell of bread and biscuits usually fills the air long before the sun even comes up. We start early because that’s when the ovens need to be ready. It’s not a modern, high-tech factory; it’s more of a place where we do things by hand and keep an eye on the temperature ourselves. The floor is a bit uneven in places, and the counters are worn down from years of rolling dough. People walking down K.E.M. Road often stop in because they catch the scent from the street. We don’t do much advertising; the bakery has just been part of the neighborhood for as long as anyone can remember. We have regular customers who come in every day for the same thing, and we know their names and how they like their stuff. Sometimes it gets a bit chaotic when the deliveries are going out, but we manage. The shelves are always being filled and emptied. We don’t have a fancy mission statement or anything like that. We just focus on making sure the flour is right and the ovens stay hot enough. It’s a long day on your feet, but we like the work.
