We focus on vegetables, which means we are always looking at the calendar and the clouds. Working with fresh produce is a lot of pressure because things don’t stay fresh for long. We spend our mornings checking what’s come in from the local gardens. It’s a lot of sorting and packing into crates. The floor is usually a bit damp from washing the greens or just from the humidity. We don’t have much in the way of fancy equipment, just some scales and a lot of baskets. Sometimes the market is good and sometimes it’s not. We just take it as it comes. It’s a lot of physical labor, bending and lifting all day. But seeing the crates full of colorful vegetables makes it feel worth it.
