We run Shitakke over in Bellandur 3. It’s a part of town that has grown a lot lately. We’re right there in the middle of it. The name is simple and so is the way we run things. Bellandur can be a bit chaotic with all the traffic and the new buildings going up everywhere. But at number 3, we just keep our heads down and work. We spend a lot of time in the kitchen. It’s where everything happens for us. People come in looking for something different to eat and we try to provide that. We aren't trying to be the biggest or the most famous place. We just want to be the place people think of when they’re in Bellandur 3. The space is comfortable enough. We’ve put in some wooden chairs and some lights that aren't too bright. It feels real. We don't have a marketing team or anyone telling us how to talk to customers. We just talk like we always do. If someone asks for a change in a dish, we try to make it happen if we can. It’s about being flexible and staying honest. We’ve seen Bellandur change from a quiet area to what it is now. We’re glad to still be a part of the community here. It’s our home as much as it is our business. We just take it one day at a time, making sure the food is right and the customers are okay. It’s a job we’ve come to appreciate over the years.
