Our dhaba is located out in Village Miaser Khana, right on the edge of Bhatinda. It is a bit of a drive from the main city center, but we get a lot of people passing through on their way to Bhiwani. The road is always full of trucks and travelers who need a break, so we keep the doors open for them. It is a very basic setup here, mostly just some charpais and wooden tables under a roof. We don't have air conditioning or fancy tiled floors because that’s not really what a dhaba in a village like this is about. Most of our visitors at Punjabhi Dhaba are drivers who have been on the road for hours and just want a heavy meal and a place to stretch their legs for a bit. We use a lot of firewood for cooking because it gives the food a certain taste that you don't get with gas stoves. My family helps out with everything, from kneading the dough to serving the tea in big glass tumblers. The dust from the road can be a bit much in the summers, but we try to keep the place as tidy as we can. It’s not the kind of place where you’ll find a printed menu; you just ask what is ready in the pots today. We serve the locals from the village too, and they usually come by in the evenings to sit and talk.
