Dosa Calling

Starts at Shop number-10. 100 Feet Road is a long stretch here in Bhatinda. We can see the Dominos sign from our front door most days. The Main Market is always full of people moving around. Dosa Calling isn't a big operation or anything like that. We just have a few people working here in the kitchen and out front. Some days the sambar ends up being extra spicy because the chilies we got from the market were stronger than last time. That's just part of how things go. Our pin code is 151002. Working in a kitchen is sweaty work, especially when the fans aren't blowing right in the summer heat. We get the coconut chutney ready very early in the morning. Sometimes we run out of things if it gets too busy, which is frustrating for everyone involved. The shop is small and we try to keep it clean, but with people coming in and out from the dusty road, it's a constant job. We don't have a big flashing sign, just enough so you can see us next to the other shops in the line. Most of our day is spent prepping. You wouldn't believe how many onions we have to chop every single day. My hands usually smell like onions even after I go home at night. It’s just a normal business on a normal road. We aren't trying to do anything fancy, just cooking what we know and hoping the stove stays lit.
