Soft Khakhra

We make khakhras here in Shastrinagar. The address is a bit long, but we are right opposite the Government Colony in Naranpura. If you’ve ever walked by, you probably smelled the flour and the roasting. It’s just a small place, M 5/34/266, tucked away. We focus on making them soft, which is what people around here seem to like. We don't have a giant warehouse or a big delivery fleet. It’s just a few of us rolling the dough and heating the pans. Sometimes the weather makes the dough act differently, so we have to adjust. It’s not a science, it’s more about how it feels in your hands. We sell to neighbors and some small shops nearby. We don't use many fancy additives, just the basic ingredients you’d find in any kitchen. My aunt showed me how to do this years ago. Now we do it every day except Sundays. The kitchen gets pretty warm, especially in the summer months, but we’re used to it. We keep everything tidy because that’s important when you’re dealing with food. We aren't trying to be the biggest company in the city. We just want to make a good snack that people enjoy eating with their tea. It’s a simple life and a simple business. We like it that way. We've been in Naranpura for a long time now and people know where to find us.
