You can find us at Shop No 1 on Khamasha Road in Jamalpur. We are right near the Bank of India, which makes it easy for people to spot us. The shop isn't very large, but we make the most of the space we have. There’s always oil heating up and the sound of frying going on from the afternoon until late at night. It gets pretty warm inside, especially during the Ahmedabad summers, so we usually stand near the front where there's a bit of a breeze. People stop by on their way home from work to pick something up. It’s a simple spot. We don't have a lot of decorations or anything like that. The walls are plain and we focus on the stove. There’s usually a bit of a crowd waiting around the counter in the evenings. We try to move as fast as we can to get everyone served. Sometimes the smoke from the fryers gets a bit thick, but that’s just how it is here. Jamalpur is a busy area, and we are right in the thick of it. We see a lot of the same faces every day. It’s a practical kind of place. We open up, get the ingredients ready, and start cooking. If you're walking down Khamasha Road, you'll see the steam and hear the sizzling. It has been our daily life for years and we are used to the noise and heat. We keep the counters wiped down but it is hard to keep the grease away completely.
