Our place is on the first floor at C1/99 in Janakpuri. It’s not a huge space, but it’s where we make all our bubble tea. We spend a lot of time boiling pearls and brewing different kinds of tea. The kitchen area is usually pretty humid from all the steam. We started this because we liked the drink ourselves and figured we could make it here in the neighborhood. It’s a bit different from the other shops around Janakpuri. We don't have a big seating area or fancy decorations. It's mostly just the counters and the equipment we need to seal the cups. Sometimes the pearl cooker breaks down and we have to scramble to get it fixed before the afternoon rush. We aren't some big international chain. We’re just a small group of people working out of a first-floor unit. We try to keep the flavors consistent, but since we do things by hand, it can vary a little bit. We get our supplies delivered up the narrow stairs, which is a bit of a workout every week. Most people find us because they live nearby or work in the local offices. We don't do much in the way of marketing. We just open up, prep the ingredients, and serve whoever comes up the stairs. It’s a simple business and we like it that way. We just keep making tea until the pearls run out for the day.
