We are based out on Airport Road in Vallakkadavu. Being so close to the airport, you can always hear the planes taking off and landing throughout the day, which is a big part of the atmosphere here. It’s a lot of stainless steel and tiled floors that get scrubbed down constantly to keep things clean. We have a staff that stays busy with chopping, cooking, and packing everything into containers. The humidity in Vallakkadavu can be quite something, but the kitchen stays cool enough with the fans. We’ve been at this location for a while, and it’s just a steady grind of making sure the food is handled right. There’s a lot of movement, with people in hairnets and uniforms moving quickly from one station to another. It’s a practical, hard-working place where the main focus is just getting the job done before the next flight is due to leave the runway.
