Suresh Pavbhaji Shop

You can find Suresh Pavbhaji Shop at Varachha Road 4. It is a very busy spot and we are right there in the middle of it all. We have a big flat tawa where we mash the vegetables. It makes a lot of noise, clanging all evening. We start our work in the afternoon by chopping bags of onions and potatoes. It is a lot of boring work but it has to be done. By the time evening comes, the whole place smells like butter. We don't have a lot of room for people to sit down. Most folks just stand around the shop or eat in their cars. It gets very crowded and sometimes the sidewalk is blocked. We don't have any fancy menus. We just make pav bhaji and that is about it. The heat from the stove is very strong, so we are always thirsty. We keep a big jug of water in the corner. We don't have any waiters in uniforms. We just shout out when the plates are ready. Sometimes we run out of bread and have to wait for the delivery guy to show up. It is a bit chaotic but we are used to it by now. We’ve been at this number 4 spot for years. People know us for being quick and having the stove hot until late at night. We clean up the mess once the last customer leaves and get ready to do the same thing tomorrow.
