Pandya Caterers

Pandya Caterers operates out of 14-83 Siddhi Appartment in Satya Nagar, Udhna. It is a residential area, so we are part of the neighborhood. My family has lived here for years and the business just grew out of the kitchen. It is a family thing, really. My brothers and cousins are all involved in one way or another. The living room often gets taken over by stacks of plates or boxes of spoons during the busy months. We don't have a corporate office or anything like that. People just come to the door of the apartment to talk to us about their plans. Udhna can get very dusty and hot, especially in the afternoons, so we do most of the heavy cooking in the early morning or late at night when it’s cooler. We have a few big burners set up and it gets quite loud. The neighbors are used to us by now, though they probably don't like the noise much. We handle everything ourselves, from buying the produce at the market to cleaning up after the party is over. It is tiring work and your back usually hurts by the end of the week. There is no magic to it, just a lot of peeling, stirring, and driving around. We just do what we do and try to keep things moving along.
