Jay Balaji Bakery

Jay Balaji Bakery is out here in Rajkot, specifically at number 13 in the Samrat Industrial Area. We are near the Satyanarayan V-Bridge on Gondal Road. Being in an industrial area means things are always moving around us. We start our work very early in the morning, usually while most people are still sleeping. The heat from the ovens is something you have to get used to, especially during the summer months here. We make a lot of different things, mostly stuff that people eat every day. It’s a basic setup. We have the big mixing machines and the cooling racks that take up most of the floor space. It gets pretty busy around noon when the deliveries have to go out. The floor is often covered in a light dusting of flour, no matter how much we clean it. We are just a local team trying to keep the shelves stocked. We don't have any big corporate ideas. We just focus on the baking and making sure the orders are ready on time. Gondal Road is always packed with traffic, so we have to plan our timings carefully. It’s a lot of standing on your feet and lifting heavy trays. It’s hard work, but it’s what we do. If you’re passing through the industrial area, you might catch the smell of the biscuits or bread. That’s us, just doing our daily rounds near the bridge.
