We have to keep a good stock of everything because you never know when a large group might walk in. The staff stays on their feet most of the shift. It isn't a place with a view of the sea, but it's comfortable enough. We don't use any complicated cooking machines, just the usual gas burners and iron pans. The smells from the kitchen usually drift out into the hotel lobby. Some days are slower than others, especially when the weather is bad and nobody wants to leave their rooms. We just sit and wait for the next person to come through the door. It is steady work. We try to make sure there's enough salt in the pots and that the tea is hot. It’s a lot of hours, but we've been doing this for a long time now.
