Malwan Samudra Hotel

Running Malwan Samudra Hotel in Chinchwad keeps us busy from morning until late at night. We are located near Parmar Nagar in Kunal House which is part of Gawade Colony. The kitchen is where most of the work happens. We get the fish fresh and have to spend a lot of time cleaning it before the lunch crowd starts coming in. The smell of coconut and spices is everywhere in the building. We have several tables and chairs set up in the dining area. We spend a good amount of time wiping them down because things can get messy with the gravies. The light in the restaurant isn't very bright but it makes it feel okay for families who come to eat. Sometimes the sink gets clogged and we have to fix it ourselves. The waiters are usually running around between the kitchen and the tables. We have a small desk near the entrance where we keep the bill books and the phone. On weekends the colony gets quite crowded and we have people waiting outside on the pavement. We don't have a big staff so everyone has to do a bit of everything. It is a lot of work to manage the stock and make sure we have enough rice and masala for the next day. We just focus on getting the food out on time and making sure the kitchen stays clean enough. It is a long day for all of us here.
