Himalaya Punjab Hotel

Panvel is where we started this whole thing, though it wasn't really a grand plan or anything like that. Himalaya Punjab Hotel has been sitting here for a good while now, and mostly we just focus on getting food out to people who are hungry and passing through the area. It gets pretty busy most days of the week. The morning starts way too early with the kitchen getting hot and the heavy smells of spices drifting everywhere. We don't have fancy decorations or anything because that's not what we are. It is just chairs, tables, and a kitchen that stays open way later than it probably should. Sometimes the fans make a rattling noise and the staff might look a bit tired after a long shift, but that's just the reality of a place like this. Panvel is a fast-moving spot so we try our best to keep up. People come in, eat their fill, and then they head back out. We don't use those big words like "quality" or "standards," we just make sure the salt is right and the rotis are soft enough to eat. My uncle always said that if the food is decent, people will find you, and so far that seems to work out. It’s a lot of standing on your feet, which is hard work, but seeing a regular face come back makes it feel okay. We’re just a local spot for a simple meal without any of that extra fuss.
