Up here in Manchar, Bhagyalaxmi Dairy Farm Pvt Ltd is what keeps us busy every single day. Even though it says 'Pvt Ltd' on the sign, it’s really just us working with the milk and the animals. My day starts way before the sun is up, usually around four in the morning when the first batch of milk comes in. It’s cold and quiet then, which is the best part of the day. We handle everything from fresh milk to curd and paneer. Manchar is a good place for this because of the farms nearby. The shop and the processing area have to be kept very clean, so we spend a lot of our time washing down the floors and the containers with hot water. It’s a lot of physical work, lifting heavy cans and moving crates onto the trucks that take the milk into the city. Sometimes the machinery acts up and we have to spend the afternoon fixing a pump or a cooling unit. We don't have a big corporate office; our office is a small room with a desk that has a view of the driveway. We see the same drivers every morning and know exactly which ones are going to be late. It’s a straightforward business. We take the milk, we check it, and we get it out to the people. There’s no secret to it, just a lot of early mornings and hard work.
