Not Just Dosas

People usually think we only do one thing because of the name, but being in Rithala, we figured we should offer more. It’s a pretty busy area and folks around here want variety. We set up the shop with a few tables and chairs, nothing too big. Sometimes it gets a bit crowded during the lunch hour when everyone comes out at once. We spend a lot of time preping the batter and getting everything ready before the doors open. It’s a lot of manual work, honestly. The kitchen gets hot, especially in the summer months, but we just get on with it. We aren't trying to be some big chain or anything like that. It's just a local spot where you can sit down for a bit. We get a mix of people, from students to office workers who just want a quick bite. Rithala has its own rhythm and we’ve tried to fit into that over the years. Sometimes we run out of things earlier than expected, which is annoying, but that’s just how it goes when you’re small. We keep the place clean and try to make sure everyone gets their food reasonably quickly. It’s not always perfect, and sometimes the orders get a bit backed up, but we do what we can. Usually, by the time we close up, we’re pretty tired but ready to do it again the next morning. It takes a lot of coffee to keep us going though.
