Our place is Shop 4 in a building at House Number 29, Plot Number 7 in Pooth Kalan. The official records say it’s on Kh No 42/3/1 in the Gram Sabha area. It’s out in the North West part of Delhi, 110086. We are right on the ground floor, which is basically essential for a kitchen business like ours. Gram Sabha Pooth Kalan is a busy, lived-in area. It’s not like the fancy parts of the city with big malls. Here, everyone knows everyone, and the streets are always full of activity. We spend most of our time in the kitchen area or the small shop front. It’s not a polished space. There are pots and pans everywhere, and the smell of cooking is always in the air. We don’t have a big marketing budget or a team of experts. It’s just us and a few helpers making food every day. The shop is small, so it gets crowded quickly if more than two people are inside. We handle the orders as they come and try to keep up with the rush. Sometimes the gas delivery is late or the water pressure is low, but we just deal with it and move on. It’s honest work. We aren't trying to be anything we aren't. We just run our rasoi and try to keep things organized in our own way. The walls are a bit stained from the steam, but that’s just part of the job. We usually close up late when the street finally gets quiet. It’s a long day but we like the routine.
