We operate out of units 17 and 18 at the New Subzi Mandi in Azadpur. If you know anything about the Mandi, you know it never really sleeps. We are usually up and moving long before the sun comes out. Our side of things is keeping everything cold, so we spend a lot of time checking temperatures and making sure the compressors are running like they should. It’s a lot of concrete and heavy doors around here. We don’t have a fancy lobby or anything like that because that’s not what people come here for. They come because they have produce that needs to stay fresh. It’s a loud, busy environment with trucks coming and going at all hours. We have a small office where we keep the logs and take the phone calls, but mostly we are out on the floor. The floors are usually a bit wet and it’s always chilly inside the units, which is how it’s supposed to be. We’ve been doing this for a while and we know the rhythms of the market. It isn't glamorous work, and you end up wearing a jacket even when it’s forty degrees outside. We just make sure the space is available and the cold stays in. It’s a lot of maintenance and watching the gauges, but it keeps the food from spoiling.
