Down in Rohini, specifically Sector 8, you'll find us at Shop No- 150 in Pocket B-6. We’ve been Ashu Bhature Wala for as long as I can remember. The stove starts early because the oil needs time to get hot enough for the bhature to puff up right. It’s a small shop, mostly just the counter and a few spots to stand and eat. People in Rohini know where we are, and on weekend mornings, there’s usually a bit of a line stretching out onto the sidewalk. We don't have a big menu or anything, just the stuff we know how to make well. My hands are usually covered in flour by ten in the morning. It’s hard work standing over the heat all day, but when you see people enjoying the food, it feels worth it. The shop at Pocket B-6 is just a simple concrete space, nothing fancy to look at. We keep the plates moving and try to make sure everyone gets their food while it's still hot. Sometimes we run out of dough before the day is over, and we just have to close up early. Sector 8 is a good place to be, lots of families and people just going about their business. We aren't trying to change the world, just trying to make a decent breakfast for the neighborhood every day. That’s about all there is to it. We just keep frying and serving until the last plate is gone for the day.
