Shankar Fast Food

We are located at Ashok Vihar Central Market, specifically at A - 5. It is a small shop, mostly just the counter and the cooking area. Shankar Fast Food is where we spend our whole day. The market outside is always full of people looking for deals, and we get the overflow from that. We do a lot of frying. The oil sizzles all day long, and the sound of the exhaust fan is like background music we don't even hear anymore. We have a few stools outside for people to sit, but most people just stand around and eat while they talk. We spend a lot of time prepping vegetables in the afternoon when it’s a bit slower. Cabbage, onions, peppers—it’s a lot of chopping. The floor is a bit uneven, so you have to be careful where you step when you’re carrying a heavy tray. We have a regular delivery guy who brings our supplies in a rickshaw every Tuesday. We’ve had the same stove for three years, and it has its quirks, like the left burner that takes a second to catch. It’s not a corporate place with manuals and uniforms. We just wear our regular clothes and get the food ready for whoever walks up to the counter. At night, we scrub everything down with soapy water and lock up the heavy metal shutter for the night. That's about it for us.
