We’ve been here in Chandni Chowk for quite a while now, right near the Jain Lal Dharmshala in Maliwara. It is a busy spot, as anyone who knows this part of Delhi can tell you. Dealing with food and catering in these narrow lanes is not always the easiest thing to do, but it is what we do every single day. Most mornings start very early before the sun is even fully up because there is so much prep work to get through. We have big pots, heavy burners, and a lot of hands helping out in the back. Usually, someone is chopping vegetables while another person checks on the spices. It gets hot, especially in the summer months when the steam from the cooking fills up the space. People know us around here because we have been at this address for years. We don't really have a fancy office or anything like that. It is just a place where work gets done. Sometimes the deliveries are late because of the traffic on the main road, but we manage to figure it out. It is a lot of physical work, lifting heavy crates and making sure everything is loaded onto the trucks properly. We have seen the neighborhood change quite a bit over the years, but the way we handle the food hasn't changed much. It is just basic, honest work. If you walk past Maliwara, you’ll probably see our staff moving stuff around or smell whatever is cooking that day.
