Hari Deep Fast Food

Hari Deep Fast Food sits at Kingsway Camp on Mall Road, number 5. It’s a place where things move fast. We have the big tawas and the fryers going most of the afternoon and evening. The students from the nearby colleges come in hungry, usually looking for something cheap and filling. We don't have much of a menu, just the things we know how to make well. The steam fills the small space when we are busy. It gets loud with the orders being shouted and the sound of the spatulas hitting the metal. We try to keep things organized, but when ten people show up at once, it gets a bit messy. There’s salt on the counters and the smell of oil on our clothes. Mall Road is always moving, and we are just a part of that. We have some benches for sitting, but they are usually crowded. It’s not a place for a long quiet meal. You come in, get your food, and go. We work long hours, standing on our feet and making sure the stove stays lit. We use a lot of onions and chilies. Sometimes the electricity goes out and we have to use candles for a bit. It’s just how it is here. By the end of the night, we are exhausted, but we clean up and get ready for the next day.
