Assam Food Stall

Being inside the New Sabzi Mandi at Azadpur is a very busy experience. Our stall is at D-425. If you know the market, you know it starts very early in the morning, even before the sun is up. We have to be here early to get everything ready for the day. There are trucks everywhere and people shouting prices for vegetables. It is very chaotic and muddy sometimes, especially when it rains. Assam Food Stall is just a small corner in this huge place. We don't have a lot of furniture. It is mostly just a counter and a stove. We cook what we know, and the smell of our food mixes with the smell of the fresh produce in the market. Most people who eat here are the laborers or the traders who are working in the mandi. They don't have much time, so we serve them quickly. We use whatever ingredients are fresh in the market that day. It is a very loud and messy environment, but we are used to it by now. The floor is just concrete and the roof is simple. We don't have a website or any fancy advertisements. People just find us because they are hungry while they work. D-425 is our spot, and we are here every single day. It's hard work, but it is what we do to get by.
