Chandni Chowk 483 is where you’ll find us. If you know this area, you know how crazy it gets. There’s always someone shouting, a rickshaw bell ringing, or just the sound of a thousand people walking by. We’ve been in this spot for a long time. It’s a vegetarian place, which is what we know. We don't bother with meat because we never have. The space is tight, and we have to make use of every inch we’ve got. We start prep work while the rest of the market is still waking up. It’s mostly about peeling potatoes and sorting through lentils. We don't have a big menu because we’d rather do a few things well. People come in, they eat quickly, and they go. It’s not the kind of place where you linger for hours because there’s always someone else waiting for a seat. The walls could probably use a fresh coat of paint, and the fans hum a bit too loudly, but it works for us. We’ve seen the neighborhood change a lot over the years, but we’re still here doing the same thing. It’s honest work. We don't make any big promises. We just put the food on the table and hope people like it enough to come back tomorrow.
