Yo Dimsum

Our little spot is over at Plot No 1D/82 in Faridabad N I T. It isn't a huge place, just a simple setup where we spend most of our time folding dough and getting the steamers ready. The kitchen is almost always full of steam, which makes the air heavy and warm, especially during the summer months. We started this because we liked the idea of a simple neighborhood shop where people could grab something quick. Most of the day is spent doing prep work, chopping vegetables and mixing fillings. We don't have a big team, just a few of us making sure things are moving. The floor is usually a bit wet from the cleaning or the steam, and there's always a stack of bamboo baskets waiting to be used. Some days are slower than others, and we just sit and talk while waiting for the next person to walk in. It's a quiet part of the block sometimes, but when the schools or offices nearby let out, it gets a bit more lively. We keep the stools simple and the menu isn't very long. We find that focusing on a few things is better than trying to do too much. It’s just how we run things here. There’s no big secret to it, we just show up every day and get the water boiling for the first batch of the afternoon.
