We open up the shop here in Sector-12 early every day while the market is still a bit quiet. Being right near the Barat Ghar means there is always some noise or some crowd around, especially when there are functions going on. I spend most of my morning just getting things ready in the kitchen, making sure everything is chopped and the stoves are working right. The shop is small, just No. 4 in the O Block market, but it keeps us very busy. It gets quite hot in here during the summer months and the fan doesn't do much, but you just get used to it after a while. Most of the people who come in are locals or folks working nearby who just want a quick bite. We don't do anything fancy or have a big menu, just what we know how to make. Sometimes the delivery guys are late and I have to handle the front and the back at the same time, which is a bit of a headache. I’ve lived in this area for years, so I know a lot of the faces that pass by the window. By the time evening comes, my feet are usually aching and I’m ready to pull down the shutter. It's just a regular life of running a food place, nothing more to it than that. We just try to keep the place clean and get the orders out as fast as we can.
