Roshni Egg Roll Corner

We set up our small spot in Janakpuri every day. It is just a simple egg roll corner and nothing more than that. We have a large flat tawa that stays hot from the early afternoon until very late at night. The sound of eggs being cracked and the smell of onions frying is usually what people notice when they walk by. We do not have any chairs or a place to sit, so people just stand around the stall or wait on their scooters while they eat their food. It gets extremely busy in the evenings when students and people finishing work are heading back home. We have to move very fast because nobody likes to wait a long time for their snack. My clothes usually smell like cooking oil by the time I am ready to go home. It is a very simple business and we do not have a large menu. We just focus on the rolls and a few other small items. The weather here in Janakpuri can be difficult sometimes, especially when it is raining or when it gets really cold, but we try to stay open as much as possible. We go through a lot of onions and green chilies every single day. Sometimes we run out of the roll wrappers and I have to go buy more very quickly. It is just a one or two-man operation most of the time. We are just here for whoever is hungry.
