At Paschim Vihar 42352, we spend most of our shift in the kitchen area. It’s not a massive space, so we have to stay organized or we end up bumping into each other. We start our day by chopping up a lot of vegetables and getting the big pots of water ready. The smell of ginger and garlic usually fills up the whole place by noon. We mostly serve noodles, and we go through quite a few bags of them every day. The lunch rush can be a bit of a scramble because everyone wants their food at the same time. We don’t have a lot of tables, so many people just order their food to go. The street outside is always busy, and sometimes it’s hard for the delivery drivers to find a spot to park their bikes. We try to keep the counters clean, but when it’s busy, things can get a little messy for a while. We don't have any fancy decorations or a big sign. It’s just a simple food spot where we focus on getting the cooking done. By the time evening rolls around, we’re usually pretty tired from standing on the hard floor. We do a final mop of the place once the last customer leaves and then shut everything down. It’s hard work, but it’s what we do. There isn't much more to it than that.
