Kitchen Calcutta

Kitchen Calcutta is over in Sector 63 at G/138. It’s a bit of a trek if you aren't already in the area, but we’ve been here for a bit now. We try to bring a bit of that eastern flavor to this part of Noida. The kitchen is tucked away in the back, and it’s usually pretty cramped with all the pots and pans we use. We don't have a massive dining area, just enough space for people to sit down and eat their lunch. A lot of offices are nearby, so lunch hour is always a bit of a scramble. We spend our mornings preping rice and various fish or vegetable dishes. It smells a lot like mustard oil in here most days. The floor is tiled and we try to keep it clean, but with people coming in from the dusty street, it’s a constant battle. We have a few regular customers who come every single day and don't even look at the menu anymore. They just sit down and we know what they want. It’s a quiet life in some ways, just focused on the cooking. Sometimes we listen to the radio while we work, mostly old songs. We aren't trying to change the world or anything, just serving food to whoever is hungry in Sector 63. It’s honest work and it keeps us busy from dawn till dusk. We just want people to leave with a full stomach.
