The kitchen at Greater Noida Institutional Area 41339 is always hot. Even with the fans on, you feel the heat from the fryers the moment you walk in. We start the day by breading the chicken. It’s a messy job and our hands get covered in that thick flour mixture. We have to follow the timers exactly or the food comes out wrong. The lunch rush starts around 12:30 when the students from the nearby colleges finish their classes. The bell on the door doesn't stop ringing for two hours straight. We stand on our feet the whole time and my back usually hurts by the afternoon. We have a lot of napkins to restock and the soda machine needs the syrup bags changed out pretty often. Those bags are heavy and get the floor sticky if you aren't careful. The floors can get a bit greasy if we don't mop them during the slow hour in the afternoon. We use a lot of yellow caution signs so nobody slips. Sometimes people complain about the wait, but we move as fast as we can with the equipment we have. At night, we have to scrub everything down with hot water and soap. The smell of the spices stays in my hair even after a shower. I take a bus home and usually fall asleep right away. It's a busy life here in the institutional area and we just keep at it.
