If you have ever been to the CST railway station in Mumbai, you know how crazy it gets. We are right there in the Fort area, which is always packed with people. Our shop is on the ground floor of the Pharmed building, at Plot 141. It’s a very old part of the city with big stone buildings and narrow streets. We focus on making pasta. It might seem like a strange place for a pasta shop, but we like it. The address is W H Marg, right near Bhatia Baug. It is a small spot, so it gets crowded very quickly during the lunch hour. We don't have a big team of chefs. It is just a couple of us in the back getting things ready. We didn't want a fancy office job, so we opened this instead. The kitchen gets quite hot in the afternoons, but that’s just part of the job. We don't have any polished marketing stuff to say. We just cook the pasta and serve it to whoever walks in. Being so close to the station means we see people from all over. Some are in a huge rush to catch their train, and others just want a quiet moment. We try to keep things simple and honest. The plumbing in these old buildings can be a pain sometimes, but we make do. It is just a local business in a busy corner of Mumbai.
