If you go down to Samrala, you’ll find Nath Di Haati. It’s a small place, really more of a traditional local shop than anything else. We’ve been here for years, and not much has changed about the way we do things. The name itself is old-fashioned, and that’s how we like it. We spend our days making traditional treats and serving the folks who live around here. It’s a simple life. We don’t have air conditioning or fancy seating; it’s mostly people stopping by to pick up a kilo of this or that on their way to a wedding or a family dinner. The kitchen is always hot, and there’s usually a thin layer of flour or sugar on the counters by midday. We don't use fancy machines; we do it by hand because that’s how we learned. Sometimes the rain makes the street outside muddy, and we have to keep mopping the entrance, but that’s just life in Samrala. We know our regulars and what they like, so we often have their order ready before they even ask. We don't have a marketing plan or a big sign. The word of mouth from people in the village is enough for us. It’s a lot of hours and not much rest, especially during the festival months, but it keeps us going. If you’re ever coming through town, you might miss the building if you aren’t looking closely, but we’re usually there.
