U S Pizza

We are over in Indira Vihar, right at CP-8. The ovens get turned on pretty early and they stay hot until we finally close up for the night. It gets a bit warm in the kitchen, especially during the summer months, but we are used to it by now. The flour gets everywhere if you aren't careful with the bags. We spend a lot of time just prepping the dough and chopping up vegetables. It is a lot of work before the first customer even walks through the door. Some people have been coming here since we first opened our doors. We see the same faces every week, which is nice. It makes the neighborhood feel a bit smaller. Sometimes the phone rings off the hook and other times it is just us sitting around waiting for the next order to come in. We don't have a big corporate team behind us, just a few of us making sure the pizzas get made right and go out on time. The delivery bikes are always coming and going from the front of CP-8. Traffic in Indira Vihar can be a total mess, so we try to tell people to be patient if things are running a bit behind schedule. We do all our own cleaning at the end of every shift. It is a long day, but it feels okay when you finish up and lock the doors. We just keep the oven running and the fridge full.
