If you walk down Peter Lane near the Tiretti Bazar area, you’ll find us. We are tucked away in that old part of the city where the lanes are narrow and the buildings have seen a lot of years. Our spot is at 11/Lu, Shun Sarani. It’s a place that smells like soy sauce and vinegar most of the time because that’s what we do. We’ve been making these sauces for a very long time, following the same way the family always did it. The building itself is old, with high ceilings and thick walls that keep it a bit cooler than the street outside. We have big vats where things ferment, and you have to be careful where you step because there are always crates being moved around. The neighborhood is famous for its morning market, and we are right in the thick of it. It’s not a high-tech factory; it’s a lot of manual work, pouring, stirring, and bottling. We know the neighbors and the local shopkeepers who come by to pick up their supplies. Sometimes the telephone exchange nearby makes a lot of noise, but we’re used to it. It’s just a humble business where we try to keep the old flavors going without making a big fuss about it. We’ve had the same recipe for as long as I can remember, and we just keep making it in batches, day in and day out, for all the local kitchens.
