Our place, Platter, is tucked away on the mezzanine floor of 57F, Purna Das Road. It’s not a huge space, but it works for what we do. Purna Das Road is always busy, so being slightly off the ground level gives us a bit of a break from the noise. We spend a lot of time here preparing food. It’s a small operation, really. Just a few of us working together to get things out on time. We don't have a big marketing team. Usually, people just hear about us from their friends or neighbors. We focus on the daily tasks. Chopping, stirring, cleaning—it’s all part of the job. Some days are longer than others, especially when there’s a big event we need to supply food for. The mezzanine floor can get a bit warm, but we’ve got fans going. We like the location because it’s central and easy for us to reach different parts of the city from here. We don’t try to be anything we aren't. We just make food. It’s simple, honest work. We’ve been at this address for a while now and we’ve gotten to know the other shop owners nearby. We just keep our heads down and do the work. Our kitchen equipment is simple and nothing special to look at, but it gets the job done. We don't put much stock in appearance, just in how the food turns out in the end. Sometimes the mezzanine floor gets a bit cramped when we have supplies delivered, but we find a way to fit it all in.
