When a big train arrives, we get a huge rush of people carrying bags and looking for a quick bite. It is a very fast-paced environment. Master Canteen is a famous spot, so there is always noise from buses and rickshaws outside. We don't have fancy tablecloths or soft lighting because people are usually in a hurry to catch their next connection. The restaurant has been here for a while and the walls show a bit of age, but we like it that way. We start cooking very early in the morning before the sun is even up. The staff is used to the heat of the kitchen and the humidity of Bhubaneshwar. We don't use any complicated recipes, just straightforward food that fills the stomach. There is no mission statement hanging on the wall. We just keep the water jugs filled and the plates moving. It can be exhausting dealing with the crowds every day, but it is never boring.
