Mast Biriyani

Ashok Nagar is a lively part of Bhubaneshwar, and that is where you will find us. We are at Plot No 138. It’s a straightforward place where we spend most of our hours cooking rice and meat in big pots. Mast Biriyani isn’t a big chain or anything, just a local spot where the staff knows most of the regular faces. The kitchen gets really hot in the afternoons, especially during the summer months here. We usually have the fans going full blast, but it only does so much. Every day we start by sorting through the grains and making sure the spices are ground right. There is always a lot of washing up to do. The street outside can get cramped with bikes, but people seem to find their way to us anyway. We don't spend money on big signs or bright lights. Most people just know we are here because of the smell of the food drifting down the road. It’s a lot of manual work, standing on our feet for ten hours a day. Sometimes we run out of things early if it's a holiday, which can be frustrating for people, but we only make what we can handle for the day. It’s a basic building, nothing special to look at from the outside, but we keep the tables wiped down and the water glasses full. It’s a regular life for us here in Ashok Nagar and we just keep it moving.
